+1 Ubuntu as a server I just got done doing a Ubuntu PPC install on an old B&W Mac. I did a minimal install and built up from there. This machine is a headless server. It went very smoothly and I had no problems finding the packages I needed, but didn't get stuck with a bunch I didn't need.
