When you wrote "Trisquel Mini", I assume you wanted to write "Trisquel  
Netinstall" (without a screen, you do not want a X Server installed).

I found this free software for speech recognition:

Speech recognition is a very difficult problem. Do not expect to find an  
application able to properly write everything you say.
