Due to the nature of the Gnome Fallback, most of the functionality of Gnome 2  
isn't there and Ruben had to hard code a lot of elements in the  taskbar to  
maintain the old look. In return, looks took precedence over functionality  
and its not as easy to customize. Maybe the 12.04 codebase that will be used  
in 6 will have more extras and applets to bring back Gnome 2 stuff.

You could also just install MATE from http://mate-desktop.org/install/#ubuntu  
and install the themes and icons from Trisquel 5.0 to get the same look and  
functions in 5.5.
