Funny you give the answer in your question.
You can setup an initial stock level by doing an inventory.
The inventory has 3 different states:

    - draft: in progress
    - done: complete so the stock level is posted
    - cancel: obvious.

PS: The name of the software is "Tryton" not "Tryton ERP" (because it is
much more than a ERP).
