I think they probably also made it bigger for cameras and however many are
standing/sitting out of shot and distanced.
I also think Stephen was fibbing just a bit. I'm skeptical that the little
alcove featured in the short bumper promoting the next night's show is actually
in his office.

Colbert is doing the show from the office building above the Ed, in what is
supposedly a recreation of his actual offices. Various staffers are present,
and Mrs. Colbert is off camera as usual (for how long is unclear). Jon Batiste
and company are still remote. Stephen had a good interview with Dr. Jon LaPook
focused on virus spread and vaccinations.
(side note: while I should have deduced this earlier, Colbert was shooting from
whatever home he has in South Carolina, and not from NJ)
