I remember similiar sounding problems. I traced them back to eAccelerator crashing (core dump) the apache. This will give only an entry in the main apache logfiles (so, if you only have access to vhost logs, you will not see anything). After disabling eAccelerator and switching to APC the BE works again.
this is not the case here, I don't have eAccelerator on this server.
