Habe das gleiche Problem. Im Mail-header steht das falsche Encoding, daher die fehlerhafte Darstellung: 
Content-Type: text/plain; charset=iso-8859-1

Mit TYPO3 6.1.7 oder deaktiviertem Ajax-Submit (danke für den Tipp!) ist alles richtig: 
Content-Type: text/plain; charset=utf-8
