Have a look at the vmware server offering (it's free).  It does
support multi processor hardware.  If you have a multi processor host
(recommended for vm usage other than development) then you can set the
vm to use one or two processors.

As with any vm app, especially in production, make sure the hardware
is robust with a lot of extra memory.  I have had good results running
a critical vm on an HP dl585 (4 amd's, 16gig).
