Well, anything you can do in Uniquery can be used in a proc, and they do have the online Uniquery documentation. I have not really seen any 'proc' language per se as there really isn't one. i.e., there are no commands that only work in a proc *that I'm aware of*.
None of that buffer stuff, etc. Just do the things in the exact same order that you would do it at Uniquery and it just works like magic. I was actually quite happy when M2K went from Microdata to Unidata, as I got to 'forget' all the proc commands as they were no longer necessary. However, I've dealt almost exclusively with Manage-2000 so there could be other stuff that others are using that I'm unaware of. hth!
