Which we did find out how to do. In the Server profile > service, type in "udcs:31439". Seems to work fine.

Have you looked at port-mapping on the firewall?
This allows port 31439 at the firewall to be mapped to port 31438 on the second UD machine, alleviating the need to re-locate the UniRPC port on the second server.
