What about Ardour? - http://ardour.org/ 

It is almost as powerful as commercial programs like cubase, logic pro and 
protools. A downside is that it may look intimidating (for new, inexperienced 
users) whereas Jokosher, although I have never used it, looks as easy to use as 
the popular garageband or fruityloops.
