Não sei se tem outras formas, mas eu fiz assim: - alt+F2 - digitar "gconf-editor" (sem as aspas) - no menu à esquerda, ir em apps --> nautilus --> desktop - aí é só desmarcar os componentes que vc quer retirar do desktop.
