I stand corrected: Intrepid does indeed appear to install the recommended fonts package as well upon installation of LyX. Thanks for pointing that out, Dara.
In light of that and the Debian Policy that Dara has listed above, I'm happy with things the way they are for 8.10. It might be nice to have latex-xft-fonts be a requirement for lyx under 8.04 (I don't see a problem with breaking Debian policy in that case, given that 8.04 didn't follow the then-current Debian policy to treat recommends as dependencies either), but that may be impractical or pointless to do at this point, given the upcoming release of 8.10 in a few weeks.
