wireshark was freezing up when I tried with gksu so I:

1. sudo apt-get install menu

2. the recommended menu enrty still was causing problems so changed:

 su-to-root -X -c /usr/bin/wireshark
to
su-to-root -c /usr/bin/wireshark

and it works perfectly now
