Try to load the applesmc module, it should detect the temperature sensors. Install lm-sensors and see what sensors reports. lm-sensors should also install the fan-control script. Do you have cpufrequtils installed?
If this works we should try to fix bug #128787 (applesmc not loaded at startup).
