@Sebastien, I discovered that there are two issues, one that happens when I set
totem volume to maximum (1) and the other when I set the totem volume to a
value lower (2) than maximum:
In the case (1) the issue happens only when I move totem player to the bottom
of my desktop in a way that its volume control, once clicked on opened, go
above the gnome apps bar: so the volume control is always resetted to a lower
value. The same issue happens if I totally maximize totem player window: in
fact in this way the totem volume control always goes up the gnome apps bar.
In the case (2) the issue is always present but it'is almost "invisible": in
fact every time I click on the totem volume control and I do nothing (that is,
after clicking on it I click on another point of totem window in order to close
the control) the volume is always lowered but just about 2% or 3%.

I test this on Hardy Heron x86_64 (fully updated) and totem 2.22.1.
Have you the opportunity to test these in Intrepid?
If not confirmed I will report it in upstream.
