After upgrading my image to 2.6.27-7-generic I am no longer experiencing the lock-up issues. As I type at this moment I have gone through the whole brightness range (FnUp/Down) and am still able to type and use menus. I had to manually change my menu.lst to use 2.6.27-7 as the installer for 8.10 by default keeps the current GRUB configuration and I had not realized until I ran a uname -r and saw 2.6.24.
