Kubuntu 8.10 (32-bit) doesn't appear to have the same problem. (But it does still have the age-old SIGSEV and Language Pack errors that were previously summarily dismissed...)
I started over with a fresh VMX, and booted the Ubuntu live CD. The mouse still didn't work in the CD menu, but after booting into the Ubuntu desktop it worked just fine. I chose to install Ubuntu from the desktop icon, and this time the mouse functions worked properly during the setup phase. After booting to the newly-installed CD, I found the mouse functions to still be in full working order.
