I also subscribed ubuntu-universe-sponsors, as per the SyncRequestProcess. On a personal level, I installed phpMyAdmin 3.1.2-1 straight from the packages.debian.org website[1] and I've had no problems with talking to my MySQL DB, creating new databases, new tables, adding new users, etc.
I know this is anecdotal and doesn't take into account every aspect of the program nor security, but it's the best I can do.
