nfs-common seems to ship that directory:

 cat debian/nfs-common.dirs | grep var.lib.nfs
 var/lib/nfs
 var/lib/nfs/sm
 var/lib/nfs/sm.bak
 var/lib/nfs/rpc_pipefs


Did you remove it manually?
