I can confirm this behaviour. It isn't caused by a pulseaudio crash since pa is 
still running and working after GNOMEtris lost it's sound.
I don't know what goes wrong when this happens, but it seems to cause other 
weird things. I am using mail-notification, a small program that runs in the 
background and displays a notification when I have new mails. It stores the 
password for my pop3-account using the gnome mechanisms (gnome-keyring-deamon I 
think), so it can access it automatically. And now what's weird: When I had 
sound enabled in GNOMEtris and it stopped working, a short time later 
mail-notification opens a dialog that tells me that it couldn't access the 
saved password and I had to enter it manually.
I have seen this behaviour of mail-notification _only_ when I had started 
GNOMEtris with sound and sound stopped working like described in this report. 
But I don't know what happens there, maybe someone who has a deeper knowledge 
of the involved internal gnome technologies has an idea?

To gain at least a little bit of debug informations, i ran GNOMEtris in
a terminal, it didn't print any informations when the sound
dissappeared, but it spit out a lot gstreamer error messages while the
sound was stil working:
