On Hardy, running GNOME Evince 2.22.1.1, have same problem. I opened a PDF using the "--presentation" option. Now, every PDF document I open is in presentation mode. I can't seem to restore the original settings. Where are the global settings for Evince, so I can change them back? This bug seems to have a history.
