I have just discovered this bug report. I was commenting this same problem in bug #368197 (https://bugs.launchpad.net/ubuntu/+source/gedit/+bug/368197).
I installed Tracker a few days ago, then yesterday the Save As dialog of several Gnome applications started to get slow, waiting several seconds before appearing. Everything else was responsive and fast, there was not any process eating the CPU time, the network traffic was very low, the memory usage was ok. Only the file-chooser dialog was slow to appear. So I killed tracker-indexer and trackerd and then suddenly the file-chooser now worked properly. So I guess bug #368197 may be a duplicate of this one.
