I figured the problem with my long list might be the lack of mount
points, but I was unsure because even when I exclude the /mnt directory
from the squashfs, I still end up having one in the final client file
system.

I agree with the difficulty in implementing a proper exclude-dir option,
however some directories really should not be there. Currently ltsp-
update-image excludes only cdrom, which is good, but the rational used
to exclude it should also exclude /mnt and /media.

ltsp-update-image should grow an "--exclude-dirs" function which allows you to 
exclude contents of directories from the squashfs if they are not essentially 
needed.
