I haven't found any java applications that will just attempt to use
fonts before checking what fonts are available.  If a program does that,
wouldn't it be a bug in that program?  Why just these fonts?  Why not
every font in Ubuntu?

For anyone interested, the openjdk-6-jre-headless package includes these two 
files:
/etc/java-6-openjdk/fontconfig.properties
/etc/java-6-openjdk/fontconfig.bfc

I'm not sure but these files might not be autogenerated, which basically
requires every font to be installed?
