I'm sorry to tell that apport doesn't do anything when the evince crashes so I can't submit a .crash file. I followed the process you describe in your message and apport just doesn't realize that evince crashed. I'm an experienced GNU/Linux user, but my programming/debugging skills are limited. If you tell me what information do you need or if there is another way to generate a .crash file manually, I would gladly follow the instructions.
