I can see some reasons for doing this - in particular I've seen menus take a while to display properly while the icons get loaded.
But heck - it doesn't look 'clean' it looks incredibly plain; and from a UI point of view the icons help people navigate faster rather than having to take the time to read the items. I agree that these should come back - even if it means we have to keep a patch on top of Gnome.
