I was able to install using the alternate installer. An option comes up
to disable software raid, which I accepted. As a result I'm able to see
all disks. Later after installation completes, I ran update-grub, and
got some errors about software raids (of which I should have none, and
if I do they're unintentional), and it fails to parse operating systems
on other drives. I removed the "dmraid" package, and reran update-grub,
and it works correctly.

This problem is somehow related to incorrectly picking up software raid
volumes that aren't in use, or previously existed.

A workaround is as I explained, use the alternate installer, and
immediately remove the "dmraid" package.
