ubuntu-desktop is just a metapackage. AFAIK, the only problem that you'll have when you remove it, is that package manager will not be suggesting you packages that _become_ part of standard ubuntu-desktop distribution. But it will suggest all of them to you as soon as you install the "ubuntu-desktop" package back again. So there is no danger in it, go ahead and let that package be removed. That's what I did. As I said however, don't remove the libraries related to alsa and pulse, because a whole bunch of useful applications will have to be removed.
