The issue is not really a bug, but the consequence of an unfortunate
sequence of events.

The user, (me), being a poor typist, somehow unknowingly got into
creating a gnome keyboard mapping for evolution composer, of letter ¨o"
into evolution/composer/pgp-sign toggle.

After that happened, everytime the user typed the letter "o" on an
evolution composer window, he ended up toggling the pgp-sign check for
the message being composed.

This was found by inspecting the file $HOME/.gnome2/accls/evolution, where the 
following configuration line was found:
(gtk_accel_path "<Actions>/composer/pgp-sign" "o")
which in fact causes the described mapping.

Once the above configuration line was commented out, the evolution
composer windows normal functionality was restored.

Recommendations:
Create a section on the Evolution documentation stating how keyboard 
accelerators end up being defined and how they can be reset.
I found no referento to this features either on the ubuntu 9.10 documentation 
or in the evolution documentation.

This bug may be considered closed/resolved now.
