That works not quite correctly, but maybe a bug from Evolution. In Gnome-Shell menu Evolution starter is shown, but unlike with other applications (Firefox, Pidgin, etc) Evolution is not shown as running with a blue dimmer around the name, but a second icon is shown for the running evolution instance - hence the name is not Evolution under the icon, but the window-title.
