Martin, that is exactly the command i was looking for. I have just run it and everything seems to be working as expected.
grep ^X /etc/default/console-setup XKBMODEL="macbook79" XKBLAYOUT="gb" XKBVARIANT="mac" XKBOPTIONS="" Interestingly it has allowed me to drop the USA keyboard layout in GDM now too, which i could not previously do.
