Would others with this problem say what sort of video cards they are
using, where the noapic option seems to prevent the almost instant
keyboard/mouse freeze?

Mine is a Nvidia GeForce 256 SDR which is referred to as NV10, and it is
far older than the mobo.

I notice my Xorg.0.log contains
EE) AIGLX error: dlopen of /usr/lib/dri/nouveau_vieux_dri.so failed 
(/usr/lib/dri/nouveau_vieux_dri.so: cannot open shared object file: No such 
file or directory)
(EE) AIGLX: reverting to software rendering
(II) AIGLX: Screen 0 is not DRI capable
(II) AIGLX: Loaded and initialized /usr/lib/dri/swrast_dri.so

However it's the lack of stability, not speed, that is putting me off using 
Ubuntu.
