I may be confused as to what "unity" we are talking about. I thought maybe I couldn't reproduce your problem because I installed unity on an existing gnome installation so I tried a usbboot of ubuntu netbook edition. However, I was unable to reproduce your problem there either. In both cases the evolution window is hidden properly. I think the problem is that I don't know very much about the netbook edition, if that is indeed the "unity" we are talking about...
