After further investigation, It's in fact the mouse curser that is disappearing or could you say it's invisible and missing. Moving the mouse around, and you can see things get highlighted, and your able to click the highlighted icon/entry like normal.
The exact same happens to Lucid using the 2.6.35-14.19 kernel from the Kernel-PPA, while using the previous 2.6.35-12 (the .35RC6 kernel) from here just works too. I too found that this is somewhat hardware dependent, as this only seems to apply boxes (thinkpad laptops ?) using the Intel ICH4 chipset - it could of course be other miner hardware changes.
