This error message suggests that you may have manually removed files or
your dpkg database may be incorrect:

start-stop-daemon: stat /usr/lib/courier/courier/courierd: No such file
or directory (No such file or directory)

I would suggest running

apt-get purge courier-mta

This should get rid of the package, and then you can reinstall it. This
will remove your configuration files, so please make sure to back them
up (and all data!) before running it.
