Hi Scott, unfortunately the workaround you suggested has already been reported many times, and turns out it does not work for everyone. I believe it is more likely to be an Empathy bug, because if I recall correctly there are several closed-source commercial products that implement the facebook chat feature without showing the issue being discussed :-(
