I create most of the document types from the specification, as well as
the corresponding OpenOffice 1.x formats, using OpenOffice. The problem
was reproducible for all files but the .odt file.

Gnome/Nautilus is capable of correctly displaying the MIME types in the
file properties. The legacy formats are named
"vnd.sun.xml.${APPLICATION}[.template]", for example .stm ->
"vnd.sun.xml.writer.template"; .sxw -> "vnd.sun.xml.writer".
