Which program of HPLIP did you try to start? How did you start it (menu, command line? post exact command line).
In a default installation on GNOME/GTK-based Ubuntu flavors (Ubuntu, Edubuntu, Xubuntu) we do not ship the graphical user interface of HPLIP, as it needs the Qt$ libraries and these do not fit onto the Desktop CD. To enable the HPLIP utilities with graphical user interface install the "hplip-gui" package.
