I've looked through the gconf keys which stores an XML string which
doesn't appear to have any obvious identifying feature, I've looked
through various xml files in the .evolution folder and nothing seems to
have anything which pertains purely to whether or not the calendar is
activated in the UI or not.

The evolution mailing list points to a decision to use a GKeyFile
instead of gconf or dconf for future releases but I'm not sure whether
or not that's actually been implemented in our current release.
