Trying to restore (unmaximize) a maximized window, as in this test case: http://testcases.qa.ubuntu.com/Applications/Unity/Touch/WinMaximizeRestore Initiation mode (via 3-finger tap) is not possible on maximized windows. The seems to prevent any geture-based method for unmaximizing a window. Traditional methods for unmaximizing the window work fine: clicking the maximize button in the title bar to toggle the maximization and dragging the title bar down also correctly unmaximizes the window.
