We learned a lot from the 10.10 deployment and that's why Unity has received a *massive* overhaul in the 11.04 cycle and if you try the latest beta and apply all the upgrades I hope you will see the fruits of that labour.
Alternatively if your woes stem from video card driver problems you might want to try out Unity2D instead which does not require hardware acceleration (https://wiki.ubuntu.com/Unity2D).
