Looking at the upstream bug, it appears that this is really a bug in package gvfs.
Looking at the change made upstream on that package, and comparing with the package gvfs that was released with natty, it appears that this change has already been made. Beside that, I repeat the steps outlined to reproduce the bug, and gedit no longer have this problem, it allows me to save files in directories owned by root, and also when the owner of the file is another user. But should be done to close this bug? Can anyone confirm if it has been fixed.
