The /var/log/Xorg.0.log file usually contains information for the current running X (if one is still running) or the last run X (if X is stopped entirely). If are running with the nv drivers, change the config to the nvidia binary driver, restart X then look at the log file it will be for the nvidia binary drivers. One way round this is to copy the log file to a different file (say in your home directory) while it is actually using nv and in the wrong resolution.
