Yes, uninstalling ttf-symbol-replacement solves this issue. Note that I have wine1.3 installed. I added both wine1.2 and wine1.3 to this issue.
Still, I wonder why poppler picks a font from wine over Symbol.pfb. Shouldn't "system" gs fonts take precedence over ports from Windows provided by wine?
