I think it would be too complicated for indicator-sound to implement something complete for this, and at the same time to keep a sane/simple ui.
Don't forget that in addition to different audio devices, one would also like to choose between different profiles for each device. For example 'analog output' / 'hdml output' on my laptop internal audio.
