I am guessing what happened with the internet disconnected was that it didn't "install updates while installing"...which is strange because usually that would improve things during the post-install process. Also, the reason you had much more updates after you installed without the network is because you didn't install them while installing. The "download and install updates while installing" feature is pretty nifty in that it grabs any serious and potentially damaging security and bug fixes prior to ever even installing Ubuntu.
