No, no messages in the log. The only reason I realized mtp-probe was missing was b/c I was trying to test my own udev rules (from the aforementioned workarounds), and while doing so I saw the message that certain rules were failing to apply because mtp-probe was missing.
The issue is simple and I've fixed it in my own version of the package: add the mtp-probe file to the manifest for the libmtp8 package (or, failing that, mtp-tools), so that it gets bundled with the package. That's the whole problem - the file is built, and the built file works.
