I believe that when you are sending out the print job it is taking the color options from the HP DeskJet 920C - CUPS+Gutenprint v5.2.7 PPD. Can you delete all the existing print queues for this printer and configure the device again with only "hp-setup" command and check if the device is printing color. Let us know on the same.
