I'm pretty sure I know what happened (since it happened with me using
Fedora 7).  The nm-applet resides in the notification area of of the
panel (which is itself a panel applet).  So, try the following:

1. Right-click on the panel and select "Add to Panel..."
2. In the list of applets, choose "Notification Area"

That's it.  NetworkManager (and any other applets that live here like
Bluetooth Manager, etc) should show up (assuming you haven't disabled
it).
