I'm pretty sure I know what happened (since it happened with me using Fedora 7). The nm-applet resides in the notification area of of the panel (which is itself a panel applet). So, try the following:
1. Right-click on the panel and select "Add to Panel..." 2. In the list of applets, choose "Notification Area" That's it.
